How It Works
Each brewing salt contributes specific ions to your water. Gypsum (CaSO4) adds calcium and sulfate — it is the primary salt for hop-forward beers. Calcium chloride (CaCl2) adds calcium and chloride — it accentuates malt sweetness. Epsom salt (MgSO4) adds magnesium and sulfate — use sparingly as excess magnesium tastes bitter and acts as a laxative above 40 ppm. Chalk (CaCO3) raises alkalinity and calcium — difficult to dissolve, so add directly to the mash. Baking soda (NaHCO3) adds sodium and alkalinity — keep sodium below 150 ppm to avoid salty flavors. A kitchen scale accurate to 0.1g is essential for measuring brewing salts.
